Tasting note
Open mash fermentation for 2 weeks; after pressing, the final fermentation took place in large oak barrels; 7 months of Surlie bottled with direct yeast tapping without filtration. A cloudy orange yellow in the glass, as the wine was not tinted and filtered. On the nose, cloves and apples. On the palate, fine velvety structure, nice acidity with apple, nut and spices. Long, nice finish. After one hour in the carafe, it shows its full range of aromas.
Culinary recommendation
Goes well with hot and cold saltwater fish appetizers and veal main courses, especially great with Vitello Tonnato in summer.
