Tasting note
The grapes come from the eponymous location at 400-500 meters above sea level and are harvested by hand in small reading boxes. Cuvée composed of 40% Sauvignon Blanc, 30% Weissburgunder; 20% Morillon (Chardonnay), 5% Pinot Gris and 5% Yellow Muscat. The harvest is done by hand in small reading boxes. Some of the varieties have a short maceration period of approx. 9 to 24 hours and are aged in wooden barrels of 300-500 liters. The wine is bottled unfiltered. Characteristic nose with aromas of nectarines, nashi pears, red gooseberries and mirabelles, floral and spicy with notes of nettle leaves, blooming meadow herbs and a delicate mineral touch reminiscent of wet stones. On the palate, ripe fruit, juicy and round, with a well-supporting acid structure and well-integrated wood spice.
Culinary recommendation
A great accompaniment to sophisticated dishes such as kohlrabi carpaccio with smoked eel, dill and roasted pine nuts, grilled guinea fowl breast on green asparagus with lime zest, toasted sesame and shitake stock or fried skrei on ragout of oven tomatoes, flamed red parica and fried capers. But also wonderful with boiled beef with horseradish sauce, boiled potatoes and spinach.
