Tasting note
Velvety ruby red. Spicy and mineral aromas of ripe plums, cherries, green peppers and cedarwood with some marzipan and dark chocolate. Present on the tongue of thick stature with power and expression. It has an unobtrusive spiciness and is very rich with well-structured but not superficial tannins and subtle minerality. The wide variety of flavors on the palate lasts a very long time.
Culinary recommendation
Sophisticated meat dishes game and generally with aromatic cuisine and dishes with savory sauces. Can also be combined with strong cheeses.
Vinification
Grapes with very limited yields are harvested by hand when they are optimally ripe. After stripping, 3-5 days storage in a cold room (cold maceration), then mash fermentation in an open tank. Ageing in French oak barriques with at least 15 months of aging, then 8 months of storage in the bottle.
