About the wine
The second fermentation in the bottle, but without disgorgement, is the original preparation of Prosecco. These “col fondo” sparkling wines, i.e. with depot, have become very popular again in the aperitivo bars of northern Italy in recent years. Col Sandago has chosen a white transparent bottle for this wine so that the sentence is visible and can therefore remain in the bottle when serving.
Tasting note
Straw yellow color with slight cloudiness. The fresh and fruity notes typical of Prosecco are combined with the characteristic impressions of bread crust from contact with the yeast. Very fresh and crisp on the palate. The perlage is a bit finer than prosecco from a pressure tank.
Culinary recommendation
A refreshing aperitif wine, but it can also accompany an entire menu. Good accompaniment to fish dishes and sausages.
Vinification
Drying and cold maceration for 24 hours, then gentle pressing of the grapes, fermentation at a controlled temperature (around 18°C). Ageing and staying on the fine yeast in the steel for 3-4 months. The following spring, the wine is bottled and undergoes a second fermentation in the bottle for about 3 months, after which the yeast particles remain on the bottom of the bottle.
