Priorat DOCa Pedra de Guix 2021 - Terroir al Limit

About the wine

In 2004, Dominik Huber and Eben Sadie started their Terroir al Limit project in Priorat with the help of the Pérez family. Nothing more than terroir should go into the bottle, excellent sites, old vines, biodynamic farming, spot fermentation, concrete and fuder instead of barrique. After only a few years, including experimental ones, Dominik has now explored the limits of terroir more alone and implemented his vision. Terroir al Limit means beguiling wines, Burgundy in the rock face, erotic black and white photographs, wines of exceptional elegance and mineral power. Very great wines!

Tasting note
Conservative thinker with a lyrical streak. A lot of peace and wisdom, just a faint reminder of youth, barely noticeable the delicate fruit, orange peels, quince, much more characterized by mature thoughts, oxidative notes, with the relaxed, inner peace that is only inherent in mature personalities, in harmony wax, resin, herbs, fennel seeds and freshly cut wood, but with the harsh life experience, bright minerality. On the palate with confident and relaxed size and freshness, without hurry or pressure, sweet orange fruit, more muted tones again, oxidative, more gentle, leisurely, albeit powerful, pace, gentle acidity, but also determination, initially mild, then pronounced mineral freshness, salty, tart, slightly sweet maturity. Respectable personality, with quiet authority, wisdom and depth instead of youth and zeal! Great wine for a long life!
Culinary recommendation
The recommended enjoyment phase of this wine is in the following period: Now until 2020 Recommended by Flaschenpöstlern: Goes well with spicy food, spicy dishes and burgers with blue cheese.
Vinification
Very selective reading by hand. Whole grape fermentation with stalks with the vineyard's own yeasts, separate aging and maturation for over one year in neutral oak barrels (500l) and vats.
