Bio
Tasting note
The Prédilection is expresses exactly what Nina and Jonathan Pabiot love as Pouilly Fumé. Perhaps that is one of the reasons why this wine is called Prédilection (preference). The grapes come from a single village and are 100% matured in concrete tanks. For Pabiot, concrete brings all the advantages of the wooden barrel, but without the taste influence of the wood.
Culinary recommendation
Flaschenpost team tip: Pouilly Fumé Luminance AOC goes well with goat cheese, mussels and fish. Our recommendation: The organic white wine tastes best at slightly chilled 10°-12°C.
Vinification
Spontaneous fermentation. Removed for 18 months in concrete tank.
