Occhio di Pernice is made from red wine grapes that have been selected with great care. The grapes are carefully placed in small wooden boxes. Only the best are good enough for this. After harvesting, they are laid out on straw mats to dry and not pressed until the following spring. The winemaker receives only small amounts of juice, but full of extractives and with very high degrees of Oechsle. As it ripens, its color develops into an amber tone, which has also given it its name: Occhio di Pernice means “eye of the partridge” in German. The result is another dimension of what is known. An elixir is revealed that spreads pleasantly throughout the body and inspires the mind. The sensory experience is overwhelming and unique in its kind.
