About the wine
Marko Fon is deeply rooted in the tradition and history of the Karst. The company has been family-owned for generations. The small farms in the Karst often still practice polyculture, but Marko has decided to focus only on wine. On the coast of Istria, from the Italian Venezia Giulia to Croatia, an early core cell of natural winemakers has established itself, Marko Fon is one of its most brilliant representatives.
Tasting note
Juicy, fresh and spicy even on the nose. Sour cherries, cassis, blackberries, lots of cinnamon and cardomon. Slender start on the palate, lots of fruit and spice again. The variety generally has a lot of acidity, which in combination with the fine tannins looks very harmonious.
Vinification
Everything is handmade, no pesticides and herbicides. Fanatic in cultivating the vineyards - minimal intervention in the cellar. Selective reading by hand in several passes. The grapes are destemmed. The cuvaison lasts 14 days to 3 weeks, a gentle maceration with occasional submersion of the grape husk results in elegant, delicate wines. Reductive aging in used barrels on fine yeasts. Minimal addition of sulfur only when bottling.
