Tasting note
Full-bodied and earthy on the nose with aromas of baked plums, blackberries and mulberries as well as a hint of iron ore, tobacco and graphite. The palate is medium-bodied and elegant with exquisitely ripe tannins, terrific tension and a long, mineral finish.
Culinary recommendation
Goes well with all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
Aging for 18 months in French barriques with 70% new wood content.
