About the wine
90-100 (+) year old vines. Vineyards at high altitudes. Very rocky limestone soils. AOC Cotes de Provence.
Tasting note
An extremely transparent, pale shade of rose. Concentrated aromas and flavors of dried citrus fruits give this rosé extraordinary strength. Glazed pear and pineapple take on the palate before the creamy finish reveals opulent, spicy notes. Powerful and elegant. It is reminiscent of vintage champagne — without the foam.
Vinification
100% fermented in stainless steel tanks. Maintained constant temperature for fermentation at 14 °C and “bâtonnage” of the yeast mixture. Aging in a tank on the yeast for three to four months.
