Vinification
A red wine for important occasions. With a gesture, an event can become more important. This is Enrico's basic idea for this red wine, which only appears in very large vintages and very limited (1,000 bottles). The night of San Giovanni on June 23 (the shortest night of the year) was interpreted as a magical-religious sign in the countryside for many centuries. Fires were started in the dark to get a good harvest. This wine is a blend of Merlot, Marzemino and Rebo (Merlot x Teroldego). The grapes come from the oldest vines and are dried briefly before pressing. The ageing takes place in barriques. Acidity 6.2 g/l, dry extract 37.3 g/l.full-bodied, followed by a slightly bitter taste on the finish, which comes from the noble and ripe tannins. Nice consistency. It is certified as organic wine and vegan, the grapes are washed before pressing. Dry extract 32.5 g/l, acidity 5.5 g/l.
