About the wine
The Càntele family founded the company in 1979. With continuous quality research, the family has won an important position among the wineries and wineries in Salento and has been able to assert itself permanently on foreign markets. The company's philosophy is to produce the best grapes in order to meet their own ambitious goals.
Tasting note
Intense ruby red with purple reflections. Wild and impetuous in the nose. sour cherry, black currant and mint. laurel, caraway and sage. A hint of rhubarb and a subtle smoky note. Iron, vetiver grass and gargano orange. On the palate, this wine is engaging, full-bodied and soft. With an impressive structure and an acidity that supports a remarkable but never aggressive tannin structure.
Culinary recommendation
Goes well with hearty meat sauces and stews. Especially recommended for Ossobuco. This Primitvo is also a treat when cooked with hard-aged cheese.
Vinification
The grapes for this impressive Primitivo are harvested in the first week of September. This is followed by fermentation at 24°C, maceration for 15 days, with daily delestation for the first 4 days. Malolactic fermentation in barriques. The aging will follow over the next 14 months in first-and second-use barriques. The wine is then aged in the bottle for at least 12 months.
