About the wine

Olivier Rivière is a name you have to remember or not, because you'll hear a lot more about him in the future anyway! His wines are too good and exceptional, so admirable what he has already achieved and how freely and independently he goes his way. Through several well-known stations in France and Spain, Olivier has gradually and purposefully acquired knowledge of biodynamic viticulture and natural wine and has applied it on his own behalf since 2006. The love for Burgundy has never died out and blazes in each of his wines (and in the expansion, which is usually in very small quantities!). Fantastic and inexpensive wines on top of that! Wild and tame, independent elegance, great cinema.

Tasting note
An old 68, mild, sweet dark ripe fruit in old age, yet unforgettable the wild times, very close to humans, but also sometimes uncomfortable, dark deep, animal, also tart, ash, but now milder and more confident, peace with the world, ethereal freshness, mint and a touch of vegetable notes. On the palate, daring and sweet, animalistically wild and tart, they say, and yet it flatters, flows gently and in a very elegant style (!) on the palate, and where it stands crosswise, the tannins he is right, and finally with conciliatory fruit and a mildly tart, concise note, it can't help it. A revolution is always inspiring, more elegant and more human! If it were a human being, you would take him to heart!
Culinary recommendation
Flaschenpost team recommends this El Cadastro DO to accompany pizza, polenta and red meat.
Vinification
Selective reading by hand. Partial whole grape fermentation with vineyard's own yeasts, withholding extraction, maturation for 24 months in 300 and 600l French oak barrels.
