Tasting note

Culinary recommendation
Goes well with autumn mushrooms, game dishes with sauce, rabbit, wild boar tenderloin, turkey, lamb shanks, lamb shoulders, kidneys, black truffles, seasoned pork.
Vinification
The grapes are harvested and selected by hand; upon arrival in the cellar, the best berries are carefully sorted out. The harvest yields low and the harvest is partially or completely destemmed. This is followed by a long mash fermentation and aging in oak barrels for 16 to 18 months.
