Tasting note
Very spicy nose. Honeycomb scent, wide floral palate and very soft acidity with a slight (attractive) bitterness of kumquat peel on the finish. Already available, but it should also be able to be stored for a very long time. Incredibly long-lasting
Culinary recommendation
It goes fantastic with scallop carpaccio with passion fruit vinaigrette and wild herb salad.
Vinification
Our most important Chenin Blanc from Swartland once again focuses on various old vines planted from 1962 to 1984. The wine is based on granite from Paardeberg mixed with slate from the east, more clay-rich soils from the north and iron-rich soils from the western parts of Swartland. The cultivated bush vines have stood the test of time, and they show the reason why Chenin Blanc is our main grape variety in Swartland. In total, Chenin Blanc is cultivated on 8 vineyards with different soils by different people and farmers. This wine illustrates Swartland, its people and its old vineyards. The grapes are pressed as whole bundles and fermented naturally, aged for 11 months in old neutral French oak barrels. 18% of two components were vinified in concrete tanks. The wine has the Certified Heritage Vineyards (CHV) seal and is part of the Old Vine Project (OVP).
