Culinary recommendation
Goes well with seafood, shellfish, fish
Vinification
Winemaking is traditional, the grapes are completely destemmed. A short maceration on the skin is performed before pressing. Pre-clarification is carried out at a low temperature. Alcoholic fermentation is temperature-controlled and malolactic fermentation is blocked to preserve the freshness of the aromas. Winemaking is traditionally carried out in stainless steel tanks under temperature controls.
