With experience and intuition, the winemaker from the Swiss winery Charles Rolaz / Hammel SA masters this white wine in the sunny and fertile landscape of Vaud. Tasting note
The Clos du Châtelard Clos Blanc 1er Grand Cru 1er Grand Cru aromas of flowers and herbs express a lot of finesse with a very special structure. The refreshing nuances of grapefruit, honey and lime then reveal their own character. A white wine with a light body and dominant acidity, which unfolds its complex structure on the tongue and palate.
Culinary recommendation
Goes well with artichokes, asparagus, lake or river fish, seafood, sushi, sashimi, white meat, Emmental, Tomme, Gruyere, Vacherin.
Vinification
For many years, the entire winery has been managed according to environmentally friendly principles. The degree of ripeness of the grapes is regularly monitored shortly before harvesting in order to determine the optimal harvest time. The harvest amount is strictly limited in order to guarantee the highest quality and thus also to meet the high standards of the “Premier Grand Cru” label. The harvest is picked by hand and sorted out after arrival in the cellar to keep only the best berries. After gentle pressing, alcoholic fermentation takes place. The wine is aged on fine yeast in stainless steel tanks and large oak barrels. A slight filtration takes place before bottling.
