Sunny landscapes of Languedoc-Roussillon give us these grapes, from which the winemaker from the French winery Domaine du Pas de l'Escalette conjures up this red wine with refinement and experience. Culinary tip from Flaschenpöstler: This Shiraz can be served very well with game or barbecue.

Tasting note
The Clapas Rouge, which mostly comes from 80-year-old Carignan vines, shone with great fruit sweetness, strong aromas of ripe cherries, dried fruits and Provençal herbal notes and a strong acidity. A wine with lots of draught — meaty yet very elegant with a very long finish.
Culinary recommendation
It goes well with southern French cuisine, stews and pot roasts, veal blanquette, beef and lamb and grilled meats.
Vinification
Between the Clapas (these are large piles of stones that divide the vineyards), the old autochthonous vines for this red wine grow on calcareous soils. Most vines are grown in a bush form and only minimal yields (approx. 30-35hl/ha) are obtained. The grapes are picked by hand and then picked again on the sorting table in the winery. Fermentation and subsequent aging take place in large wooden barrels. Only Carignan is aged in small pieces from Burgundy. The Clapas rouge impressively shows that the often underrated Carignan grape variety can produce fascinating wines with the right care, old vines and strict harvest limits.
