About the wine

A small champagne house with a clear signature: Sensual minerality. And the two Gonet siblings also combine this in a team. The charm of Chantal (Sales), the dedication to the terroir of Pierre (winemaking). The starting point is Le Mesnil-sur-Oger, Mecca of Chardonnay, place of distinctive minerality and highest acidity in Champagne. And in 7 generations since 1830, vineyards have only been purchased very selectively. Today, 20 hectares are spread over 8 villages and 35 different sites according to organic, sometimes biodynamic principles (not certified) and, of course, expanded separately, in small tanks. The reserve wines consist of up to 7 vintages, which gives depth and embeds the minerality beautifully. Champagne that you could always drink, that never gets boring, that combines minerality and sensuality like no other. DARLINGS.

Vinification
Highly selective reading by hand. Fermentation in steel tanks, malolactic fermentation, over 3 years bottle aging on the lees. Dosage 7g/L, <20mg/L sulfur.
