About the wine

An ancestor of the current owner of the Castel di Salve Francesco Winspeare had to flee the country as an Allied loser after the War of the Roses between the English noble houses from 1455 to 1485. The young man finally arrived in Puglia, where he founded a family with a local noblewoman. One of her possessions was the Castel di Salve. The prosperity of the Winspeare family (as of Puglia in general) was based even more on the extraction of olive oil, which was not only used as food, but also for lighting in oil lamps. Only much later did the cultivation of vines become more important and a winery was built next to the Castel di Salve, where the harvests of the family's two other estates were also brought in. Francesco Winspare's first Primitivo came onto the market only a few years ago. The Cento su Cento was a resounding success. Winspeare has now followed a second Primitivo, the Centino.

The prosperity of the Winspeare family (as of Puglia in general) was based even more on the extraction of olive oil, which was not only used as food, but also for lighting in oil lamps. Only much later did the cultivation of vines become more important and a winery was built next to the Castel di Salve, where the harvests of the family's two other estates were also brought in. Francesco Winspare's first Primitivo came onto the market only a few years ago. The Cento su Cento was a resounding success. Winspeare has now followed a second Primitivo, the Centino. He wanted to offer a wine that would express the characteristics of this ancient grape variety without taking over the high alcohol content (around 15.5%) of Cento. The result is a wine of intense fruitiness with notes of cooked wild berries and cloves. Smooth but not sweet on the palate, it is a wonderful wine that accompanies freshly prepared pasta excellently.
Culinary recommendation
Goes well with lamb, beef, veal, venison, pork, grilled meat.
