Tasting note
In deep purple, the Babylonstoren Cabernet Sauvignon flows into the glass and exudes a seductive bouquet of red plums, ripe blueberries, sweet tobacco and fragrant cedarwood notes. The full-bodied and classically dry palate is caressed by delicious nuances of dark fruits, ripe cherries and cassis, paired with a velvety texture and multi-faceted layers of spice. Its well-rounded tannin and the smooth, long-lasting finish complete the treat.
Culinary recommendation
The full-bodied Babylonstoren Cabernet Sauvignon is best enjoyed with dishes with dark meat or game.
Vinification
The vines come from the slopes of the Simonsberg between the wine-growing regions in Franschhoek, Stellenbosch and Paarl on the Western Cape in South Africa. The grapes were harvested from eight different vineyards on slate and Hutton soils. After fermentation was complete, this first-class Cabernet Sauvignon matured for 18 months in selected French oak barrels, of which 40% was virgin wood and 60% second and third coated wood.
