Tasting note
On the nose, an intense bouquet of dark berries, plums, floral shimmer and peppery nuances. Succulent flow on the palate with present and straight-lined tannins, very elegant and complex and an aromatic finish.
Culinary recommendation
It goes wonderfully with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven. Wonderful accompaniment to all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
The grapes are fermented on the mash for several days. Ageing in French barriques with 30% new wood content.
