The yield is low, as the presses filled with 4,500 kg of grapes produce 2,650 liters of Pinot Noir must or 2,800 liters of Chardonnay. The first fermentation takes place in steel tanks for three weeks, at the end of which the wine is kept cold to promote sedimentation of the deposits. The cuvée is made at the end of winter by blending Pinot Noir and Chardonnay from the same harvest. Fermentation takes place in stacked bottles and is completed with a long maturation in cool, dark rooms over 4 years.
