About the wine

Frédéric - Fred - Cossard founded his winery here in 1996, in Saint-Romain in the Côte-de-Beaune, not necessarily known for large terroirs, and is all the more impressive what he does, what sparkling Burgundy he brings to the bottle, and this requires neither sulfurization nor refinement of the wines. What counts here are clean pressing, low alcohol, low pH values and patience. And unshakable trust, because the wines go through various stages of long, unaffected fermentation, including those in which they are unappealingly oxidative brown, until they naturally self-purify, take on a healthy color and shine and show their origin, as only a few Burgundy wines do. And so many look out to Saint-Romain and up to Frédéric Cossard - a star among natural wine producers!

Sensual Dating — Close your eyes, shut up, smell, this fruit, sooo juicy, so warm, that is of such sensual passion, that soft fullness, the red to brown fruit, that gentle stimulation of the ethereal notes. On the palate, finally, touch, so erotic, so smooth, and as it gently rises in one, brings to life, the fine, mild acidity that awakens pleasure, the ethereal tart notes in the so voluptuous dark pinot fruit, ripe cherry, and that is already so fulfilling... What a sensual, erotic burgundy!

Vinification
Selective harvest by hand and very low yield. Very slow fermentation with the vineyard's own yeasts in a cool environment over several months and maturation in a large concrete egg, unfiltered, unsulphurated.
