Volcelest Rouge AOP 2019 - Domaine Jean-Yves Millaire

About the wine

The domain was founded in 1950 and is now run by grandson Jean-Yves, in the spirit of the ancestor. Even if Fronsac and Canon Fronsac don't have the same reputation on the market as Paulliac or Margaux, for example, the terroir is great. And if you cultivate the 47ha biodynamically for so long (certified: Biodyvin 2009), finely selected and not intervening even in the cellar, then the result is delicious Bordeaux. Jean-Yves lets the terroir speak and not the critics. The work in the cellar is carried out without additives; the grapes also ripen early, with full aroma and wonderful freshness. Bordeaux, where it is not the nobility that reigns, but life. Wonderfully pure, fresh and unvarnished. The price-pleasure ratio is simply great.

Tasting note
Young leader - shines calm, cool, confident focus and pull: the red and dark berry fruit young and clear, plus this straight, demanding leadership, precision: also green and mineral-tart notes. On the palate, this smart, focused linear elegance again, despite all its youth: the dark fruit is also soft, so determined: clear, tart structure: tart tannins, green pepper, prevails so smartly and unwavering. It's fascinating how the soft Merlot and the focus of Cabernet Franc merge to create a winner here.
Culinary recommendation
Recommended by Flaschenpöstlern: Volcelest Rouge AOP goes well with slightly spicy red meat, duck and poultry.
Vinification
Selective reading by hand. Fermentation with vine-grown yeasts, ageing in amphorae and new oak barrels. Unfiltered, unembellished, slight addition of sulfur.
