About the wine
Like a jewel surrounded by vineyards in the heart of Languedoc-Roussillon, the estate is spread over 24 hectares near Servian. The vines are planted on a rich terroir and are in excellent sunny position. Since ancient times, Saint Cécile has been known as the patron saint of musicians. The estate was named after her in honor of the previous owners. Comparable to a musical score, the wines of the Domaine are produced in harmony with the terroir.
Tasting note
Straw yellow color with bright reflections. Fruity nose with mandarin zest, fresh apricots and candied oranges. Full-bodied and rich with a fresh, spicy finish.
Culinary recommendation
Excellent aperitif. Delicious with Asian dishes and white meats.
Vinification
The characteristic features of the grape variety are emphasized by a strict selection of plots. Fermentation takes place in stainless steel tanks at a low temperature, which allows the natural aromas and fruity notes to be preserved. The wine is aged on fine yeast for three weeks to improve the structure and develop the aromas.
