About the wine
The San Valentino winery is located on a hill near Rimini. It has been biodynamically managed by Roberto Mascarin since 1997 and the star oenologist from Italy, Luca D'Attoma, has been advising him since 2016. His Terra di Covignano is considered one of the best Sangioveses in Italy and has been awarded three glasses by Gambero Rosso.

Tasting note
Harmonious and elegant nose of ripe fruits and spices, underlined by a slight toast note. On the palate, perfect balance between impressive structure - filled with dense, round tannins - and exquisite fruit elegance.
Culinary recommendation
Recommended by Flaschenpöstlern: TERRA DI COVIGNANO DOC Sangiovese Superiore Riserva goes well with lamb, pasta and beef.
Vinification
Selective, gentle hand picking in small baskets. Gentle destemming and squeezing of ripe berries. Temperature-controlled mash fermentation with wild yeasts takes place in stainless steel tanks for eight days. The ageing takes place for 18 to 20 months in large wooden barrels and barriques.
