About the wine
Taurasi, the first DOCG in southern Italy, is considered the best red wine in Campania. It is also known as the “Barolo of the South”, also because of its exceptional longevity. Other parallels include the use of a single variety and the name after a town.
Tasting note
Brilliant ruby red. Intense and complex on the nose, with aromas of prunes, sour cherries and black cherries, plus a spicy note and licorice. On the palate with a fresh start, impressive structure, accompanied by polished tannins. Very long aftertaste.
Culinary recommendation
Goes well with nutritious dishes such as stews, braised meat, pasta with wild ragout.
Vinification
The grapes are selected, destemmed and gently pressed. The must is fermented with selected yeasts in temperature-controlled stainless steel tanks. Mash fermentation takes place at a relatively high temperature and takes about ten days. The wine is then aged in French oak barrels for at least one year. The wine is then lightly filtered and bottled. It stays in the bottle for at least a year before it is on the market.
