Tasting note
Old Pinot Noir vines grow at the foot of the Leitha Mountains in the individual Thenau vineyard, which are not tied to a wire frame, but the shoots largely enjoy their freedom. In “stick culture”, the vines are only supported by wooden posts. This type of education forces the vines to root deeper. In winter, the shoots are cut back to a few centimeters and grow up again at the stake in spring. The unprocessed deciduous wall protects the fruits from too intense sunlight. Read carefully by hand, gently mashed with your feet and fermented spontaneously in an open fermentation container. Old Pinot Noir vines grow in the individual Thenau vineyard on the Leithaberg, which are not tied to a wire frame, but the shoots largely enjoy their freedom. Pinot ripens in half for 10 months before being bottled without filtration and completely without sulfur. The quantity was limited to 600 liters.
