About the wine
The absolute specialty of the Weingut Bietighöfer is the wines from the “Grande Reserve” line, which are spontaneously fermented on their own yeast in new 500 liter wooden barrels and impress with their authenticity. Young winemaker Stefan Bietighöfer boldly implements new ideas - that is well received and promises a bright future. Winegrowing was carried out on the Weingut Bietighöfer as early as the 17th century and Stefan Bietighöfer knows the importance of high quality. With passion and diligence, he continues what generations before him have built up, showing his keen sense for the best locations and the right measures at the right time. As a member of the “Generation Riesling” association, the direction of the young winemaker is clear: he is committed to (quality) Riesling, looks beyond national borders and impresses with authentic wine. Stefan focuses all work steps on environmentally friendly management. Weingut Bietighöfer cultivates around 19 hectares of vineyards. The wines get their typical character from the combination of the mild climate with clay, sand and limestone soils. His wines are not temperature-controlled during fermentation, no corrective procedures are carried out in the cellar, they are not pre-clarified, but fermented spontaneously in 500l tonneaux from the Sylvain tonneaux from Pomerol, neither brightened nor filtered and they may mature in barrels on whole yeast until they are thoroughly fermented.
