Tasting note
Lively and herbaceous with crisp layers of kiwi and stinging berries. Intense palate with tropical and green aromas. Full-bodied and elegant with a mineral finish.
Culinary recommendation
You are welcome to serve Kleine Zalze Family Reserve Sauvignon Blanc to your guests in its pure form, the complex taste requires no assistance. As a food companion, South African white wine is particularly good with poultry dishes and white fish.
Vinification
The grapes were selected from vineyards in Stellenbosch (False Bay) and Durbanville. These specific sites are within 10 km of the sea and face south, making them cooler than the norm. The grapes were picked by hand early in the morning and in some cases even during the night. From the start, we process Sauvignon Blanc very reductively with dry ice in the vineyard all the way to the fermentation tank. The grapes were squeezed with a CO2 blanket immediately after arrival (before 10:00 in the morning) and brought into contact with the skin for at least 12 hours. This is to extract all the lovely flavors that are in the skins. The juice was forced out of the peels by gravity and settled for 24 hours. The clean juice was filled into the fermentation tank, where we inoculate with selected yeast strains and ferment very slowly at 13 degrees Celsius. The wine spent 7 months on the primary yeast before being bottled with a very coarse filtration.
