Tasting note
Rich ruby red with purple shimmer. Fruity bouquet with aromas of cherry and plum, surrounded by spicy scents, dominated by black and white pepper and nutmeg, rounded off by a touch of chocolate and light tobacco. Rich, full-bodied wine with velvety, well-blended tannins, a silky, harmonious finish of wonderful length.
Culinary recommendation
Goes well with antipasti, venison, goulash, barbecues, T-bone steak, entrecote Café de Paris, wild boar tenderloin, venison pepper.
Vinification
Angaben über Vinifizierung: Die Trauben werden separat nach Traubensorten vinifiziert. Fermentation und Mazeration während 25/30 Tagen in Stahltanks, bei einer kontrollierten Temperatur nicht über 28/30°C. Zweite Fermentation in Barriques von 225 lt aus französischer Eiche. Ausbau für 18 Monate in Barriques und vor dem Verkauf für weitere sechs Monate in der Flasche.
