Vinification
After destemming and gentle squeezing, the grapes are placed in cement tanks. After 8-10 days of maceration, without the addition of pure yeast, the wine is separated from the skins and placed in amphorae, where the fermentation is slowly and naturally ended, so that the fruity components come into their own. After a maturation period of 3-4 months, the wine is bottled.
