Tasting note
On the nose, it starts with herbal notes of basil, rosemary and mint. Citrus fruits, stone fruits and a slight note of yeast then come to the fore. The palate is dry and pleasantly full-bodied with juicy acidity and a wonderful structure. The Riesling ends for a long time with notes of salted lemon and mint.
Vinification
After manual harvesting, the wines are aged largely uncontrolled in both wooden barrels and stainless steel tanks and left on the whole yeast for a long time. The puristic and dry wines are neither refined nor deacidified.
