Tasting note
It smells of ripe red apples, citrus fruits, apricot jam, Mediterranean herbs and some flint. On the palate, Riesling has a balanced acidity and is very delicate and subtle with a lot of elegance and great mineral length in the finish.
Vinification
After manual harvesting, the wines are aged largely uncontrolled in both wooden barrels and stainless steel tanks and left on the whole yeast for a long time. The puristic and dry wines are neither refined nor deacidified.
