Vinification
Preparation of the Glera portion of white wine in stainless steel tanks, destimming and direct pressing of the Pinot Noir portion to preserve primary aromas, storage of the fresh must without alcoholic fermentation in a pressure tank at -2°C, cuvetting with white wine and subsequent ageing using the Charmant Method (tank fermentation process)
