Vinification
White vinification with soft pressing, fermentation takes place slowly over a period of approximately 15 days at a temperature controlled to 18 degrees, then storage at low temperatures in stainless steel tanks. Sparkling winemaking is carried out according to the Charmat method, which is used for young, fine and bouquet wines.
