About the wine
Juicy, accessible, fruity Pinot Noir from Nelson. Aromas of dark fruits and fine tannins make for lots of drinking pleasure.

Tasting note
The wine has an exciting scent of black cherries, plums, blackberries, some cloves and chalk. A gentle, balanced acidity strengthens the taste of chocolate, soft spices (cloves, cinnamon), black cherries and plums. Fine, velvety tannins add structure to the wine.
Culinary recommendation
Goes well with grilled salmon, duck, game and mushroom dishes.
Vinification
Even when selecting the vines, winemaker Trudy Sheild pays attention to strong, spicy grapes. After harvesting, the grapes were destemmed in the wine cellar. The mash was kept cool for about 5 days to extract color, aroma and fine tannins from the skins (cold maceration). Fermentation was stopped as soon as the wine was dry and the youthful tannins had integrated. The wine was separated directly from the skins and stored on fine yeast in new and old Hogsheads (250l, Tonneleir Rousseau). In spring, the cellar warmed up and triggered the second fermentation. The wine was stored in barrels for a total of 10 months.
