About the wine
Blooming and graceful landscapes in Umbria give us these grapes, from which the winemaker from the Italian winery Antinori conjures up this red wine with refinement and experience. With this powerful Pinot Noir 2015 — Pinot nero Umbria IGT, the term flavor takes on a new meaning. Flaschenpöstler culinary tip: This Pinot Noir is excellent to serve with salmon or cheese.
Tasting note
Ruby red with garnet reflections. Fine, seductively elegant nose with aromas of red berries, delicate roasted aromas, some forest soil and tobacco. Round and flattering on the palate, with a juicy supporting acidity, finely honed tannins and a good length on the finish.
Culinary recommendation
Always a treat with game or pasta with a creamy mushroom ragout.
Vinification
After careful harvesting in the Castello della Sala vineyards near Orvieto, the grapes reach the winery. There, a partial maceration period is followed by fermentation in temperature-controlled steel tanks at around 26° Celsius for about a week. For malolactic fermentation, the young wine is moved to barriques. The wine is then transferred to new French barriques and aged for ten months. It refines in the bottle for a further eight months and then goes on sale.
