Tasting note
Ruby red with purple reflections. Intense bouquet of red cherries and with subtle, floral scents such as hay flowers. Mild acidity, fleshy body with nice fullness. Cherries and sour cherries on the palate, with hints of dried herbs. Beautifully integrated wooden insert. Very ripe and soft tannins give the wine a long, harmonious finish.
Vinification
The maceration period is around 12-14 days, the fermentation is temperature-controlled and carried out using our own breeding yeasts. The wine then matures for several months in French barriques, including a few months on fine yeast.
