About the wine

Tenuta Vallocaia is the pride of Rudi Bindella, patron of Switzerland's most successful gastronomic family. Every other month, he travels to his Vallocaia winery in Montepulciano for a few days. It is “a pleasant deceleration,” feels “like coming home” for him. We think that you can clearly see the great care and dedication of Vallocaia wines. Fossolupaio is an all-rounder that enhances every everyday dish with a pinch of Italianità.

Tasting note
Medium ruby red with purple reflections. Delicate on the nose, almost seductive. Fruity and delicate roasted aromas. Ripe black cherries, blackberries, plums. This is accompanied by subtle notes of licorice. Firm, juicy and perfectly structured on the palate. Elegance par excellence. The aromas of the nose are confirmed on the palate. Breed in texture, tannins of very good quality. The aftertaste is invigorating and has a good aromatic length.
Culinary recommendation
This all-rounder needs no instruction manual: Enjoy it with pizza and pasta, salami and mortadella, and antipasti of all kinds.
Vinification
After harvesting by hand, the grapes go through maceration of two weeks in large wooden vats. The subsequent aging takes place in steel tanks for six months and in large wooden barrels for a further three months. Thanks to the subtle use of wood in the nose, the wine has an additional spicy component. The palate is also a bit rounder and fuller.
