About the wine

Two families got together here in the 1990s to break new ground together, today, just a generation later, the 10-hectare small winery is firmly established in the top of Burgenland, if not Austria. Less is more, both in the vineyard and in the cellar, close to nature, spontaneous fermentation, low use of wood. The restraint pays off, their terroir seems wonderful through the wines, these are refined, elegant and fresh wines with a depth and spice that invites exploration. Since Christoph Wachter (2008) took over in the cellar, there has been another jolt through the winery, the awards and prizes are downright down to the winery: newcomer, trendsetter, winery of the year, all of which is very, very deserving and at very reasonable prices.

Tasting note
Secret Alliance currently very secretive, dark, elite aura, seems very mysterious, very dark quiet fruit, black berries, just a hint of sweetness, lots of tart, ethereal notes, undergrowth, ash, all very discreet, quiet, elegant. Occult elegance on the palate, black silk, very dark, clear and soft fruit, then strikes like a dark spell, ethereal, very fresh, tart, energetic elegance. Here, Wachter-Wiesler show what is in Blaufränkisch. Black magic, what a fascinatingly mysterious, energetic wine!
Culinary recommendation
Perfect red wine with briefly roasted beef tenderloin as well as with venison and venison back a perfect partner.
Vinification
Selective reading by hand. Very gentle processing, fermentation in large vats and open barrels (500l) with vineyard's own yeasts, aging for 24 months in large wooden barrels (1000l and 1500l), no fining.
