Vinification
For many years, the entire winery has been managed according to environmentally friendly principles. Ripeness monitoring to determine harvest time, yield limit (40 hl/ha), harvest and hand selection to keep berries intact. Additional sorting out of the best berries upon arrival in the cellar. Maceration on the skins for approximately three weeks. Ageing on fine lees in oak barrels for 12 months.
