About the wine

The Château de Saint Cosme is the oldest winery in Gigondas. The Barruol family bought it in 1490 and Louis Barruol is now running it for the 15th generation. The estate consists of 22 hectares of vineyards, which are on average 60 years old, which is an important basis for the quality of Saint Cosme. Since 1972, Saint Cosme has cultivated organic farming, even though Father Henry was still selling his Gigondas wines in barrels to retailers back then. For him, it was not about profit, but rather about maintaining and preserving the vineyards for the next generation. To date, no herbicides, artificial fertilisers, pesticides or synthetic products have been used.

Bio
Tasting note
Deep ruby red, juicy and ripe berry aromas (blackberries and cassis), pepper, tobacco and Mediterranean herbs such as rosemary and tyme on the nose. Full on the palate and with ripe tannins. A balanced and complex red wine that impresses with its fruit and remarkable density.
Culinary recommendation

Vinification
After manual harvesting, the selected grapes are subjected to a cool maceration period without destemming. The must is then fermented in old wooden vats in the underground cellar for around six weeks. The wine then matures in concrete tanks before it is bottled without filtration and unembellished.
