About the wine

Self-made winemaker icon, hidden treasure, négociant éleveur prestigieux - What had a long tradition in France of producing wines from purchased grapes has been making David Moret on the side since 2000 and therefore in small quantities, but all the more sought after. With a great passion, even an obsession, for winemaking, David Moret was unfortunately not born into a winemaking family with large estates. After studying viticulture and enology in Beaune, he stood there fairly empty-handed. The horrendous land prices on the Côte d'Or even back then did not help. But this clever man with a great love of wine made a name for himself selling winemaker supplies and as a flying winemaker in the region. This brought him into the highest circles of top producers in the region. An extremely clever move and the beginning of fulfilling his lifelong dream with his own wine, genuine wines, typical Burgundy, but never overloaded.

Tasting note
Fresh, green-fruited nose, lime zest, grapefruit and bitter lemon, also bright, fresh exoticism with kiwi and chirimoya, this whole crunchy fruit game becomes delicate and only subtly accompanied by warm, spicy notes of woodworking, vanilla, nutmeg, even nutmeg, the deeper you penetrate, the more intense this pleasant hug comes up. On the palate with lots of race and flavor, which play with the creamy, warm aromas, a lot happens, something tart on the palate and seems almost spicy, combined in unbelievable density and intensity, playfully, one incites the other, creating something big, something great. For long and beyond.
Vinification
Without pumping, vinified only with gravity, fermentation with the vineyard's own yeasts and aging in new and used oak barrels, before bottling, also without pumping, the wine rests in steel tanks. No fining, no filtration.
