Corpinnat Brut Imperial BIO 2018 - Gramona

About the wine

Gramona is a family-owned winery that was founded back in 1881 and is now managed by Jaume and Xavier Gramona in the 5th generation. While other sparkling wine producers in Penedés themselves have responded to market challenges with quantity under the D.O. CAVA quality label, Gramona, with a few, selected winemakers under the EU brand CORPINNAT, has unconditionally focused on quality and has long been regarded as the best and finest address for Spanish sparkling wines. Vinification involves rigorous aging on fine lees, often several years, and grapes from the best vineyards of Pénedes, such as La Plane and the steep slopes of Mas Escorpi. Gramona CORPINNAT have a firm structure, harmony and fine acidity like only large champagnes, but in all this they have greater expressivity. Lots of style, very sexy

Tasting note
Crackling eroticism. Oh, how much style, how much ripe panache and sweet warmth, bright ripe warm fruit, apple, stone fruit, fennel and fresh light bread, unmistakably aristocratic, subtle mineral-chalky notes in the background. On the palate, a physical sensation for all senses, beguiling, creamy, passionate elegance, plus witty, intense aromas, fresh, ripe fruit, yeast, pastry, ends nobel herb - or does not end! About everything, always.
Culinary recommendation
Flaschenpöstler-Tipp: Corpinnat Brut Imperial BIO passt ideal zu Austern, Apérohäppchen und Fischgerichten.
Vinification
Very selective harvesting by hand, careful processing using gravity, whole grape pressing. The base wines are vinified separately. After the second fermentation, the wine is left on the fine lees for almost 5 years and is only disgorged shortly before being sold. Dosage 7g/L
