Tasting note
Completely destemmed, mash with your feet, short standing time on the berry skins, spontaneously fermented in large wooden containers, no fining, unfiltered and bottled without additional sulfur. The fermentation carbonic acid that has not been filtered out and leaves a funny, sparkling mouthfeel is not a random product, or even a mistake such as secondary fermentation, but desired.
Culinary recommendation
Goes well with dark meat and all types of game: deer, deer or wild boar.
