About the wine
Baigorri relies entirely on the gentle gravitational method. The result of the elaborate process is an exceptionally aromatic red wine, in which the wood notes remain beautifully in the background.
Tasting note
Dense purple with an opaque center. Amarena cherries and plum cake in the tempting nose, red and black berries in perfect ripeness, also pear bread and gingerbread, a poem in the nose. Velvety palate with lots of cherries and plums, as well as a fine note of cinnamon, increasingly meaty extract and well-supporting tannins, full of character and at the same time radiating a lot of finesse, unmistakable Rioja freshness down to the berry finish.
Culinary recommendation
Goes well with polenta, barbecue and red meat.
Vinification
A few words about vinification: The grapes were hand-selected on sorting tables and then destemmed. Thereafter, temperature-controlled mash fermentation took place in stainless steel tanks. The mash was gently pressed to then initiate malolactic fermentation in stainless steel tanks. The wine aged for 12 months in barriques (second and third use) before bottling.
