About the wine

We have maintained a close friendship with Stephan for a long time, who continues to enrich Smith & Smith today with his profound knowledge, his trained senses and his clear positions - and yet the most important thing has not even been mentioned: his wines. It is not for nothing that his signature adorns our Zurich house wines Felix and Regula, which are produced in cooperation with Zweifel wines. Like every winemaker, Stephan is pleased with good evaluation, praise and recognition - alone: he would never create a wine for this purpose. The grape variety, the slope, the year — he listens to them, he literally reads them and finally translates them into his wonderful wines. Stephan's consistency is best experienced in the vineyard — biodynamics is not a label here, it is what you see, hear and smell when you enter the Taggenberg with its valuable limestone subsoil and mild microclimate. Fuchs and others can be found not only on labels, but especially in vineyards, where no chemical fertilizers or fungicides are used. Here, these things are made by themselves, from natural ingredients such as onions - you can also say: Stephan cooks for his vines! And in between, it flutters and chirps, the sheep keep the green small. 2.7 ha of nature and idyll. And these should of course also be in the bottle.

Tasting note
Ice-cold angel. Colourless, like a dream structure, bell-like, almost glittering appearance, delicate sweet fruit, gooseberry, mandarin, raptured and transparent, tart. Bright, translucent, floating on the palate, a touch of sweet, ripe fruit, like a vision, fleeting yet a lasting, concise, impression, flying away first pure aromas, then with tart acidity and mineral. A Sauvignon Blanc like light and air, weightless, tart, slightly sweet aromas (will get a bit warmer when ripe). Great interpretation by Stefan Herter of how he removes all ballast from the wine and only bottles the soul of Sauvignon Blanc!

Vinification
Selective harvesting by hand and very gentle vinification without pumping. Cold maceration, very gentle pressing, slow fermentation at low temperatures in steel tanks and aging for 6 months on fine yeast, bottling without acid degradation.
