Tasting note
The Sancerre has a vivid straw-yellow colour with green reflections. The clear and dynamic nose reveals hints of grapefruit, white flowers and stony minerality. The palate impresses with a full and smooth start, rich and luscious with an underlying freshness. The distinctive fruitiness harmonizes perfectly with a silky texture. A wine that impresses with its clear structure and balanced freshness and reflects the terroir with elegance.
Culinary recommendation
Delicious with fish — from grilled sea bream and trout to steamed zander or a fine fillet of monkfish.
Vinification
Sancerre is grown 50% on Silex soils and 50% on limestone soils. These are located in Sainte Gemme and Sury-en-Vaux, small villages in the heart of the Loire. After harvesting, the grapes are gently pressed in the cellar and the resulting juice rests for about 36 hours before alcoholic fermentation starts at controlled 15-18°C. These careful steps preserve the unique aromas of the Sauvignon Blanc grapes and allow the wine to develop harmoniously. The wine then matures on fine lees for a few months until it is bottled in spring.
